Sour Cream and Chive Mashed Potatoes

  • lbs. Farmer's Promise Russet potatoes, scrubbed, peeled and cubed (about 4 potatoes)
  • ½ c. sour cream
  • 5 tbsp. butter, divided
  • 1-2 tbsp. fresh minced chives, divided
  • 1 tsp. garlic salt
  • ½ tsp. onion salt


  • In a saucepan, cover potatoes in cold water. Bring to a boil; reduce heat, cover and simmer for 25 minutes, or until the potatoes are very tender; drain. Add the sour cream and 2 tablespoons butter to potatoes as you are mashing them.  Add 1 tablespoon chives, garlic salt and onion salt; continue to mash. Melt the remaining butter; drizzle over the potatoes and sprinkle with remaining chives.

Recipe Tips

Any means of mashing will work. You can use a stand mixer, hand mixer, or by hand with a potato masher
When reheating, add a small amount of sour cream or butter to the potatoes
