  • lbs. Farmer's Promise Russet potatoes, scrubbed and cubed
  • 2 tbsp. olive oil
  • ½ small Farmer's Promise red onion, chopped
  • 3 cloves garlic, thinly sliced
  • 2 tsp. olive oil
  • 1 tsp. crushed red pepper
  • ½ - 1 tsp. salt
  • ½ tsp. granulated onion
  • Pepper, to taste


  • Preheat oven to 475-degrees. On a greased baking sheet, toss the potatoes with 2 tablespoons olive oil. Bake for 20 minutes.
  • In a bowl, toss the red onion and garlic with 2 teaspoons olive oil; add to the potatoes; bake an additional 10 minutes, or until potatoes are fork tender.
  • Sprinkle with crushed red pepper, salt, granulated onion and pepper; Toss to combine.

Recipe Tips

Don’t peel the potatoes! The Russet potato skin has more nutrients than the interior of the potato. It is loaded with fiber; about half of the potatoes fiber is from the skin.
You can also make these in your air fryer! Simply toss the potatoes in a bowl with all of the ingredients. Preheat air fryer to 400-degrees. Add to air fryer and cook at 400-degrees for 15 minutes, or until desired crispiness.
