  • 1 ½ lbs. Farmer's Promise red potatoes, scrubbed and quartered
  • 4 garlic cloves, thinly sliced
  • 1 tbsp. olive oil
  • ¼ c. butter
  • 1 tbsp. fresh parsley, minced
  • 1 tbsp. fresh green onion, minced
  • ½-1 tsp. garlic salt
  • pepper, to taste


  • Place potatoes in a steamer basket, cover and steam for 25-30 minutes, or until fork tender. Place potatoes on cutting board; cut into quarters, press with a masher to split skins.
  • In a skillet, cook and stir the garlic in olive oil until browned. Add the butter; cook until melted. In a bowl, toss the potatoes with the butter and garlic mixture; sprinkle with parsley, green onion, garlic salt and pepper.

Recipe Tips

To keep red potatoes red, steam in a steamer rather than boiling in water.
Turn this recipe into an appetizer by omitting cutting the potatoes into quarters. Place on a baking sheet; sprinkle with bacon and cheese. Bake for 5 minutes, or until cheese is melted. Sprinkle with chives and serve with sour cream.
