Preheat oven to 400-degrees. Wash potatoes and cut each into 8 slices lengthwise. Place the sliced potatoes on a large rimmed baking sheet. In a bowl, combine oil, garlic, salt, pepper and paprika; mix until combined. Toss with your hands to thoroughly coat.
Roast for 40 minutes or until tender and lightly browned on the edges. Remove from the oven and stir or flip the potatoes over with a thin spatula. Roast an additional 10-15 minutes, until deep golden brown. Serve alone or with the dipping sauces of your choice and sprinkle with freshly chopped parsley.
