Aged White Cheddar & Smoked Bacon Mashed Potatoes

These creamy potatoes are loaded with aged white cheddar cheese and smoked bacon. This recipe dish pairs well with all the classics like meatloaf, fried chicken, fish or grilled and roasted meats.

Ingredients

  • 4 lbs. Farmer's Promise potatoes, peeled and cut into chunks
  • ¼ c. Kosher salt
  • ½ lb. bacon, cut into lardons
  • 2 c. whole milk
  • 3 cloves garlic, crushed
  • 2 tbsp. unsalted butter
  • 2 tbsp. bacon fat, reserved from cooking
  • 1 c. while cheddar, grated
  • 1 bunch chives, sliced
  • Salt and pepper, to taste

Instructions

  • Place prepared potatoes and salt in a large pot of cold (should be at least 3 inches over potatoes). Bring the pot to a boil over high heat then reduce the heat to medium and simmer until fork tender, about 35-40 minutes.
  • While potatoes are cooking, place the bacon in acool sauté pan and place over medium-low heat until the fat renders out, about15-20 minutes. Once rendered, increase heat to medium-high to crisp bacon.
  • Once the bacon is crispy remove it from the pan with a slotted spoon and set aside. Reserve 2 Tbsp of bacon fat.
  • In a small sauce pot, combine milk and garlic andplace over medium-low heat. Cook until just simmering then turn the heat offand rest for 5 minutes. Skim out the garlic cloves before using.
  • Drain the cooked potatoes then transfer to a large mixing bowl. Add the seasoned milk, butter, reserved bacon fat, Cheddar, and chives (reserve some for garnish), and mash with a potato masher until the desired consistency is reached.
  • Fold in bacon and season to taste with salt and black pepper. Garnish with additional butter if desired and reserved chives.
