- 4 lbs. Farmer's Promise potatoes, peeled and cut into chunks
- ¼ c. Kosher salt
- ½ lb. bacon, cut into lardons
- 2 c. whole milk
- 3 cloves garlic, crushed
- 2 tbsp. unsalted butter
- 2 tbsp. bacon fat, reserved from cooking
- 1 c. while cheddar, grated
- 1 bunch chives, sliced
- Salt and pepper, to taste

Place prepared potatoes and salt in a large pot of cold (should be at least 3 inches over potatoes). Bring the pot to a boil over high heat then reduce the heat to medium and simmer until fork tender, about 35-40 minutes. While potatoes are cooking, place the bacon in acool sauté pan and place over medium-low heat until the fat renders out, about15-20 minutes. Once rendered, increase heat to medium-high to crisp bacon. Once the bacon is crispy remove it from the pan with a slotted spoon and set aside. Reserve 2 Tbsp of bacon fat. In a small sauce pot, combine milk and garlic andplace over medium-low heat. Cook until just simmering then turn the heat offand rest for 5 minutes. Skim out the garlic cloves before using. Drain the cooked potatoes then transfer to a large mixing bowl. Add the seasoned milk, butter, reserved bacon fat, Cheddar, and chives (reserve some for garnish), and mash with a potato masher until the desired consistency is reached. Fold in bacon and season to taste with salt and black pepper. Garnish with additional butter if desired and reserved chives.
