2 c. Farmer's Promise mashed potatoes (leftovers)
1 egg 1
1 c. shredded cheddar cheese
½ c. chopped green onions
Sour cream

Instructions

Preheat oven to 375-degrees; spray 12-count mini muffin tin with non-stick cooking spray.
Combine mashed potatoes with egg, shredded cheese & green onions. Fill each muffin tin with mixture & bake 25-3o minutes.
Serve with sour cream & crumbled bacon, if desired.
