Ingredients

Dressing Ingredients

  • ½ c. mayonnaise
  • 1 tbsp. buttermilk
  • 1 tbsp. pickle juice
  • Salt & pepper, to taste

Salad Ingredients

  • lbs. Farmer's Promise red potatoes, cubed
  • 1 bunch green onions, thinly sliced
  • 2-3 dill pickles, chopped
  • 2 tbsp. fresh minced dill
  • 3 hard-boiled eggs, sliced
  • Fresh dill, optional for garnish
  • Chopped dill pickles, optional for garnish

Instructions

  • In a small bowl, whisk dressing ingredients together & set aside.
  • Place potatoes in a medium pot filled with cold, salted water. Bring to a boil, then lower heat & boil gently, just until potatoes are fork-tender, about 8-12 minutes. Drain & rinse in cold water to stop cooking.
  • Place potatoes in a large bowl & toss with a generous amount of the dressing (save some for later use). Add green onions, chopped pickles & dill; toss gently. Top with sliced eggs; Refrigerate for at least an hour or two to let the flavors mingle. Add more dressing, if necessary. Garnish with extra dill & chopped pickles, if desired.
