  • 4 Farmer's Promise Biggins® Russet potatoes, scrubbed and pierced with a fork
  • Olive Oil or bacon fat
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, sliced
  • salt and pepper, to taste
  • sour cream


  • Preheat oven to 450-degrees. Brush or rub outside of potatoes with olive oil or bacon fat. Place a roasting rack or oven-safe cooling rack on a baking sheet (this will allow the air to circulate evenly around the potato, resulting in a crispier skin). Place potatoes on this rack and bake for 50-55 minutes, or until tender. Cut an “x” in the top of the potato; fluff flesh. Sprinkle with bacon, green onions, salt, pepper and a dollop of sour cream.

Recipe Tips

After scrubbing potatoes, be sure to dry them well. The excess moisture on the skin can seep into the potato during baking and cause soggy skins.
