Ingredients

  • 2 tbsp. vegetable oil
  • 3 medium Farmer's Promise yellow onions, thinly sliced
  • ¼ c. vegetable broth
  • 3 tbsp. aged balsamic vinegar
  • 2 tbsp. dark brown sugar, packed
  • ½ c. dried apricots, chopped
  • ½ tsp. Kosher salt, course

Instructions

  • Warm the oil in a large skillet over medium heat. Add onions and cook for about 20 minutes, stirring frequently, until soft and lightly browned. Add the broth, vinegar, sugar, and apricots. Reduce heat to low and cook, stirring frequently, for about 20 more minutes or until dark and tender.
  • Remove jam from heat (it will be quite thick) and transfer to a food processor and add salt. Pulse a few times until the jam is chunky but uniform in size. Adjust seasoning as needed.
  • Store jam in an airtight container in the refrigerator for up to 5 days.
