  • 8 medium Farmer's Promise Red potatoes
  • 4 tsp. olive oil to drizzle over them
  • 4 tbsp. butter
  • 8 tbsp. grated Parmesan cheese
  • Garlic herb, black pepper & sea salt all-purpose seasoning, to taste

  • Arrange a rack in the middle position of the oven and preheat to 425-degrees.
  • Position one potato in between two wooden spoons. Cut vertical slits (⅛ inch apart) in the potatoes, cutting straight down until your knife hits the wooden spoon, leaving the bottom intact. Repeat this cutting process for the remaining potatoes. Place immediately into a bowl of cool water to help them fan open a little (they’ll also open more as they bake).
  • Place potatoes on baking sheet or in cast-iron pan. Drizzle potatoes lightly with olive oil, then use a pastry brush to cover the potatoes completely with the oil. Bake for 30 minutes, or until they are beginning to crisp up and the insides are tender. Remove from oven and top each potato with a ½ tablespoon butter, a sprinkle of seasoning and1 tablespoon Parmesan cheese. Return to oven for about 10 minutes, or until the cheese has browned and the tops are crispy.

Recipe Tips

Feel free to experiment with any seasonings of choice.
If reheating, preheat oven to 375-degrees and bake for about 15 minutes, or until heated through.
