Potato Product Russet Potato

Ingredients

4 Farmer's Promise Russet potatoes, scrubbed and pierced with a fork
1 c. water
1 tbsp. olive oil
4 tbsp. butter
4 tsp. fresh minced chives
salt & pepper, to taste

Instructions

Add water to an pressure cooker; brush potatoes with oil and place potatoes on rack or steamer basket over the water. (the water level should be lower than the rack)
Cook on high for 18 minutes. Let pressure release naturally.
To crisp skin, place potatoes on oven rack at 450-degrees for 10 minutes.
Serve with butter, chives, salt and pepper.
