  • 4 Farmer's Promise Russet potatoes, scrubbed and pierced with a fork
  • 1 c. water
  • 1 tbsp. olive oil
  • 4 tbsp. butter
  • 4 tsp. fresh minced chives
  • salt & pepper, to taste


  • Add water to an pressure cooker; brush potatoes with oil and place potatoes on rack or steamer basket over the water. (the water level should be lower than the rack)
  • Cook on high for 18 minutes. Let pressure release naturally.
  • To crisp skin, place potatoes on oven rack at 450-degrees for 10 minutes.
  • Serve with butter, chives, salt and pepper.

Recipe Tips

Do not let the potatoes touch the water or they will get mussy inside, instead of fluffy.
