Ingredients

1½ lbs. Farmer’s Promise yellow potatoes, scrubbed and sliced 1/8-inch thick
1 c. heavy cream
1 package (7 oz.) smoked Gouda cheese, shredded
½ c. shredded Cheddar cheese
Salt and pepper, to taste
2 tsp. fresh thyme

Instructions

Preheat oven to 400°F.
In a greased 11-inchx7-inch or 2-quart baking dish, layer ¼ of the potatoes, sprinkle with salt and pepper, and ¼ of the Gouda cheese. Repeat layers. Pour cream over the top; sprinkle with Cheddar cheese. Bake for 50-55 minutes or until potatoes are tender. Sprinkle with thyme.
