  • lbs. Farmer’s Promise yellow potatoes, scrubbed and cut into wedges
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • ¼ tsp. garlic salt
  • ¼ tsp. pepper
  • 2 tbsp. fresh minced parsley or cilantro


  • Preheat oven to 475-degrees. In a bowl, toss the potatoes with olive oil, salt, garlic and pepper. Transfer to a greased baking sheet. Bake for 12 minutes, turn potatoes over then bake an additional 12-15 minutes, or until tender and golden brown. Sprinkle with parsley; serve with sour cream for dipping, if desired.

Recipe Tips

For a flavorful sour cream, combine 1 cup sour cream, 1 tablespoon lime juice, 1 teaspoon lime peel, 1 teaspoon fresh minced cilantro, ½ teaspoon seasoning salt, ½ teaspoon onion salt, ½ teaspoon granulated garlic, ½ teaspoon chili powder, ½ teaspoon cumin, ¼ teaspoon paprika; serve with Yellow Potato Wedges.
