  • lbs. Farmer's Promise Russet potatoes, scrubbed and halved (about 4 potatoes)
  • 2 tbsp. butter, melted
  • ¼ tsp. paprika
  • ½ tsp. chili powder
  • ½ tsp. garlic salt
  • ½ tsp. cumin
  • 1 tbsp. fresh minced cilantro
  • Cilantro Lime Sour Cream (see Recipe Tips)


  • Preheat oven to 475-degrees. Cut each potato widthwise six times, being careful not to go all the way through; fan potatoes slightly.
  • In a bowl, combine the butter, paprika, chili powder, garlic salt and cumin. Brush over potatoes; place cut side down on a baking sheet.
  • Bake for 30-35 minutes or until tender. Sprinkle with cilantro. Serve with cilantro lime sour cream, if desired.

Recipe Tips

To make cilantro lime sour cream, combine 1 cup sour cream, 1 tbsp. lime juice, 1 tsp. lime peel, 1 tsp. cilantro, ½ tsp. seasoning salt, ½ tsp. onion salt, ½ tsp. granulated garlic, ½ tsp. chili powder, ½ tsp. cumin and ¼ tsp. pepper
