  • 2 lbs. Farmer's Promise potatoes
  • 1 tbsp. garlic powder
  • 1 tbsp. sage, rubbed
  • ½ tbsp. salt
  • ½ tbsp. black pepper
  • 2 tbsp. olive oil

Whipped Feta Dip

  • 1 c. cream cheese
  • 1 c. feta cheese
  • 2 c. non-fat Greek yogurt
  • 2 tbsp. olive oil
  • 1 tbsp. dill
  • 1 tbsp. mint
  • 2 tbsp. pomegranate seeds
  • Salt and pepper, to taste
  • Smoked paprika, garnish

  • Preheat oven to 375°F
  • Rinse potatoes and using a mandolin or a large sharp knife, thinly slice yellow potatoes and place in large bowl. Then add olive oil, rubbed sage, garlic powder, salt, black pepper and gently tossed to coat.
  • Place potatoes on parchment paper lined baking tray, place in preheated oven and bake for 20 minutes or until light golden brown and crispy. Remove from oven and cool slightly.
  • For whipped feta dip, in a food processor or blender, add cream cheese, feta, yogurt, salt and pepper (to taste); whip until combined. Place dip in serving bowl, drizzle olive oil, dust with paprika. Garnish with dill, mint and pomegranate seeds.
