- 2 large Farmer's Promise russet potatoes, cut into ¼-inch thick slices
- 1 tbsp. olive oil
- Salt & pepper, to taste
- ½ c. shredded cheddar cheese
- 2-3 bacon slices, cooked & crumbled
- Green onions or chives, for topping
- Sour cream, for topping

Rinse potato slices under running water (helps get rid of some starch); pat dry. Place potato slices in a large bowl & sprinkle with olive oil, salt & pepper. Preheat air fryer to 380-degrees. Arrange sliced potato in a single layer; air fry 5 minutes, until lightly browned on top. Flip each potato slice & cook for 2 minutes. Sprinkle cheese evenly among the potato slices and cook for 2-3 minutes, until the cheese is melted & slightly caramelized. Top each potato slice with bacon, green onions or chives & sour cream.
