Ingredients

4 Farmer's Promise Biggins® Russet potatoes, scrubbed and pierced with a fork
Olive Oil or bacon fat
4 slices bacon, cooked and crumbled
2 green onions, sliced
salt and pepper, to taste
sour cream

Instructions

Preheat oven to 450-degrees. Brush or rub outside of potatoes with olive oil or bacon fat. Place a roasting rack or oven-safe cooling rack on a baking sheet (this will allow the air to circulate evenly around the potato, resulting in a crispier skin). Place potatoes on this rack and bake for 50-55 minutes, or until tender. Cut an “x” in the top of the potato; fluff flesh. Sprinkle with bacon, green onions, salt, pepper and a dollop of sour cream.
