  • 2 lbs. Farmer's Promise Yellow potatoes
  • 2 tbsp. olive oil
  • 3 tbsp. fresh herbs, chopped (such as: rosemary, parsley, thyme, basil)
  • 1 tsp. garlic powder
  • ½ tsp. paprika
  • Salt and pepper, to taste

  • Preheat oven to 425-degrees.
  • Scrub potatoes, (keep the peel on). Dice into 1-inch cubes. If time allows, soak potatoes in cold water for up to 1 hour. (This removes starch and makes for a fluffier potato). Drain and dry potatoes.
  • Toss potatoes, olive oil, herbs and seasonings. Place on a baking sheet and bake for 30-35 minutes, until browned and fork tender.

Recipe Tips

If you’re cooking something else in your oven that needs a lower temperature, here’s the approximate times for the lower temperatures (based on 1-inch potato cubes):
• 350° for 45-50 minutes
• 375° for 35-40 minutes
• 400° for 30 minutes
Dry herbs can be substituted; use 1 tablespoon dry herbs in place of fresh.
