- 2 lbs. Farmer's Promise potatoes
- 1 tbsp. garlic powder
- 1 tbsp. sage, rubbed
- ½ tbsp. salt
- ½ tbsp. black pepper
- 2 tbsp. olive oil
Whipped Feta Dip- 1 c. cream cheese
- 1 c. feta cheese
- 2 c. non-fat Greek yogurt
- 2 tbsp. olive oil
- 1 tbsp. dill
- 1 tbsp. mint
- 2 tbsp. pomegranate seeds
- Salt and pepper, to taste
- Smoked paprika, garnish

Preheat oven to 375°F Rinse potatoes and using a mandolin or a large sharp knife, thinly slice yellow potatoes and place in large bowl. Then add olive oil, rubbed sage, garlic powder, salt, black pepper and gently tossed to coat. Place potatoes on parchment paper lined baking tray, place in preheated oven and bake for 20 minutes or until light golden brown and crispy. Remove from oven and cool slightly. For whipped feta dip, in a food processor or blender, add cream cheese, feta, yogurt, salt and pepper (to taste); whip until combined. Place dip in serving bowl, drizzle olive oil, dust with paprika. Garnish with dill, mint and pomegranate seeds.
