- 3 lbs Farmer's Promise potatoes, peeled and thinly sliced
- 2 c. heavy cream
- 1 egg, plus 1 egg yolk
- Salt, pepper and nutmeg, to taste
- 3 c. shredded Gruyere cheese
- Shredded Parmesan cheese, for garnish
- Paprika, for garnish
- Chives, for garnish
In a bowl, combine cream, egg, yolk, salt, pepper and nutmeg.
Layer sliced potatoes, shredded Gruyere cheese and cream mixture in a nonstick foil-lined and greased 13 x 9 inch baking dish.
Bake at 350°F for 40-45 minutes, or until potatoes are fork tender.
Cool, cover and refrigerate overnight. Invert onto a cutting board and cut into desired shapes. Place on a parchment lined baking sheet, sprinkle with Parmesan cheese and paprika. Bake for 10-15 minutes or until heated through. Sprinkle with chives, if desired.
