Ingredients

  • 2 ½ c. vegetable or peanut oil
  • 1 medium Farmer's Promise yellow onion, thinly sliced

Instructions

  • Combine the oil and sliced onion in a2-quart sauce pot then place over medium heat. Cook onions for about 90 minute sor until there are very few bubbles and the onions are a deep, golden brown. Reduce heat if browning too quickly.
  • Using slotted spoon, remove the onions from the oil and set on a cloth lined sheet tray or plate. Allow to drain completely, about 10 minutes. Store the onions in an airtight container at room temperature for up to 7 days.
  • FOR THE OIL: Wait until the oil has cooled completely to room temperature. You can now reuse this oil by passing it through a fine mesh strainer and into an airtight container. Store in the refrigerator and use anytime you need oil and want to add a rich onion flavor to the food.

Notes
