28oz.pork kielbasa, sliced into ½-inch thick coins
2medium Farmer's Promise red onion, diced
½green cabbage, shredded
Instructions
In a small mixing bowl, combine the mustard, lemon juice, sugar, salt and pepper. Whisk together until combined ,set aside.
In a 6-qt heavy bottomed stock pot or wok, warm the vegetable oil over medium-high heat. When hot, add the kielbasa and sauté, stirring occasionally, until the coins have deep brown edges. Remove from pot and set aside.
Add the onion to the hot pan and cook until they begin to brown, about 4-6 minutes. Add the cabbage and cook another6-8 minutes, or until it just begins to brown. Return the kielbasa to the pot and add the mustard sauce. Stir ingredients together until hot and thoroughly mixed.
Serve hot with preferred sides.
Notes
This recipe works with any grain mustard. Try a spicy Creole mustard with andouille sausage for a spicy Cajun version.
Pairs well with crusty breads or over roasted Golden Red potatoes.
