4Farmer's Promise Russet potatoes, scrubbed and pierced with a fork
1c.water
1tbsp.olive oil
4tbsp. butter
4tsp.fresh minced chives
salt & pepper, to taste
Instructions
Add water to an pressure cooker; brush potatoes with oil and place potatoes on rack or steamer basket over the water. (the water level should be lower than the rack)
Cook on high for 18 minutes. Let pressure release naturally.
To crisp skin, place potatoes on oven rack at 450-degrees for 10 minutes.
Serve with butter, chives, salt and pepper.
Notes
Do not let the potatoes touch the water or they will get mussy inside, instead of fluffy.
