1 ½lbs.Farmer's Promise Russet potatoes, scrubbed and halved lengthwise
2c.shredded Cheddar cheese
8slices bacon, cooked and crumbled
1 ½tsp.steak seasoning
2tbsp.fresh minced parsley or green onions
Preheat oven to 450-degrees.
Drizzle baking sheet with olive oil; place potatoes cut side down on baking sheet.
Bake for 25minutes, brush with remaining oil, bake an additional 5-10 minutes or until tender.
Using a small dinner spoon, scoop flesh from each half into a medium bowl, leaving a1/4-inch thickness of flesh in each shell. Arrange shells on a baking sheet, cut side up. Bake an additional 10 minutes. Use the flesh for another use.
Sprinkle cheese, bacon, seasonings into shells. Bake for 5 minutes or until cheese is melted. Sprinkle with parsley.
This recipe can be made ahead and heated 10-15 minutes before serving.
Serve with sour cream for dipping.
Top potato skins with other toppings such as: caramelized onions, bacon, bleu cheese and chives.
