Garlic & White Onion Mashed Potatoes

Ingredients

  • 6 large Farmer's Promise Russet Potatoes, peeled & diced
  • 4 oz. unsalted butter
  • 2 medium Farmer's Promise white onions, thinly sliced
  • 6 cloves garlic, minced
  • ½ c. chicken stock
  • ½ c. heavy cream
  • tsp. Kosher salt, course
  • ½ tsp. black pepper
  • 2 tbsp. fresh chives, sliced

Instructions

  • Add diced potatoes to a large stock pot and cover with cold water. Bring to a boil over high heat, then reduce heat to a simmer. Cook potatoes until fork tender, about 15-20 minutes once boiling. Drain potatoes and set aside, return pot to medium heat.
  • Add butter to stock pot and when hot, add onions. Cook until slightly browned, about 10-12 minutes. Add garlic and cook another 60 seconds. Add the stock and heavy cream, bring to a simmer then turn off heat.
  • Add the cooked potatoes, salt and pepper to the pot and mash to preferred consistency. Adjust liquid and seasoning as needed. Serve hot garnished with fresh chives.

Notes

For super smooth potatoes, combine in a food processer. Be sure to process only until just smooth, over-processing will turn potatoes gummy.
Smoky cheeses like gouda and smoked cheddar go great with this recipe, along with bacon, truffle oil, and savory gravies.
When boiling potatoes, add a little oil to the surface of the water to prevent foaming.
