Red Potato Salad with Herb Vinaigrette

Ingredients

  • 1 ½ lbs. Farmer's Promise red potatoes, scrubbed
  • ¼ c. olive oil
  • 2 tbsp. red wine vinegar
  • 2 tsp. Dijon mustard
  • ¾ tsp. sugar
  • dash of granulated garlic
  • salt, to taste
  • 1 tsp. fresh parsley, minced
  • 1 tsp. fresh rosemary, minced
  • 1 tsp. fresh thyme, minced
  • 2 garlic cloves, minced

Instructions

  • Place potatoes in a steamer basket, steam for 25-30 minutes, or until tender.
  • Cut into quarters and refrigerate to cool.
  • In a bowl, whisk the oil, vinegar, mustard, sugar, granulated garlic and salt.
  • In another bowl, toss the potatoes with parsley, rosemary, thyme and garlic. Toss with the dressing. Refrigerate for 1 hour.

Notes

To keep potatoes a bright red color, steam in a microwave rather than boiling on stove top.
