Ingredients

  • c. prepared mashed potatoes leftovers work great!
  • 2 large eggs
  • c. whole milk
  • ½ c. grated Irish cheddar
  • ½ tsp. garlic powder
  • c. all purpose flour
  • tbsp. baking powder
  • 1 tsp. sea salt

Instructions

  • In a large bowl, combine mashed potatoes, eggs, oil, milk, cheese and garlic powder.
  • In separate bowl combine flour, baking powder and salt.
  • Combine wet and dry ingredients until dough is formed. Lightly flour the countertop and gently knead the dough.
  • Gather the dough into a smooth ball and it into a lightly oiled cast-iron skillet.
  • With a sharp knife cut a line down top of the dough. Place dough into oven and bake for 45-55 minutes.
  • Remove bread from oven and allow to cool for 10 minutes on a wire rack.
  • Serve with butter, fruit preserves or honey.
